Simple Shrimp Scampi

Olive Oil (or butter, if your arteries can handle it...) - enough to coat your pan generously
2 cloves of garlic (or as many as you can handle)
1 shallot (optional)
salt, chili flakes (as hot as you can handle), paprika all to taste
1 pound shrimp

Clean & devein your shrimp - i like to take them out of their shell and just leave the tail on.

dice garlic and heat in skillet over medium heat with olive oil. Be careful not to burn the garlic as it will taste bitter. Add shrimp to the pan, sprinkle chili flakes & paprika.

Serve over pasta or rice (you can use the leftover olive oil/butter mixture to drizzle over).
